It's not "stab the ladies they love me", it's "all the ladies they love me". As for the "middle finger to the law" line, there has been a long history of mistreatment and framing of black people by the police. Of course I don't think that is the case with all cops, nor do I think that all black people are innocent of all crimes, but it is merely an expression acknowledging that history from Jay-Z's side of it.
